Adrift Tiki Bar Unveils New Summer Menu

From a tableside cocktail from the bar’s private rum barrel to the return of the highly popular baby back ribs, Adrift is your go-to destination for summer libations and eats

DENVER (May 14, 2024)— Adrift Tiki Bar proudly debuts their new summer menu on Friday, May 31. The Beach on Broadway will showcase some new cocktails and dishes, including the return of Adrift’s infamous in-house smoked BBQ Baby Back Ribs with a signature guava BBQ sauce, an elevated rum cocktail that includes tableside service from Adrift’s private rum barrel, and a take-home souvenir mug. The summer menu additions aim to elevate the guest tiki experience with global and Polynesian-inspired creations.

“Guava is a staple in Hawaiian Culture that shows up in both food and drink,” says Adrift Chef and General Manager Peaches Ayers. “We love to execute 'bar' food at a high level and surprise our guests with our take on one-of-a-kind dishes that can't be found anywhere else in Denver.”

Adrift’s Summer Menu includes the following:

Food:

  • Guava BBQ Baby Back Ribs: These decadent pork ribs, which come in a half or full rack, are rubbed in a secret seasoning blend, smoked in-house for three hours, and finished in the oven for an additional three hours to achieve the perfect balance of smoked flavor and fall-off-the-bone texture. Coated in a signature guava BBQ sauce and charred on the grill for crispy exterior, this dish is served with two Hawaiian rolls, sriracha slaw and your choice of Hawaiian mac salad, coconut jasmine rice, or cucumber salad

  • Paradise Salad: Mixed greens tossed with carrots, fresh cucumbers, diced avocado, cherry tomatoes, diced mango, and pickled onions sprinkled with black sesame seeds. Served with your choice of Charred Pineapple Vinaigrette or our new Zesty Chili Crisp Dressing

  • Loco Moco Smash! Burger: Two SMASHED ground beef and chorizo blend patties, tonkatsu sauce, freshly sliced cheddar cheese, a fried egg, furikake, microgreens, and volcano sauce served on a King's Hawaiian hamburger bun. Served with drizzled volcano fries sprinkled with furikake. This award-winning dish took a hiatus during the fall and winter months and is back for a limited time this summer

  • Big Island Rice Bowl: Coconut jasmine rice, Hawaiian mac salad, marinated cucumbers, edamame, pickled carrots and shredded red cabbage, garnished with furikake. Add in grilled jerk chicken, sumiso fried tofu, gochujang pork belly, or marinated tuna poke (new). Now served in a bamboo steamer lined with banana leaves

  • Guava Bliss Cheesecake: Guava infused New York style cheesecake topped with a thin guava glaze. Served with house-made mango passionfruit sauce, diced mango and lime zest

Drink: 

  • Lost in the Ayame Arashi: Kyoto Distillery KI NO BI dry gin, Ume plum liqueur, creme de violet, house-made cherry blossom simple syrup, lemon, egg white, ube powder

  • La Cuidadora: Creyente Azul Añejo Cristalino mezcal, Don Julio Alma Miel tequila, angostura bitters, ginger, honey, agave, lime

  • Captain’s Share of the Spoils: Hampden Estate 8-Year Single Jamaican rum, Emperor 12 Year Lily White rum, lime, grapefruit, orange, pineapple, honey, house-made falernum, Hamilton pimento dram, pernod, house-made grenadine, angostura bitters. Tap into Adrifts private rum barrel. Become the captain of the ship with this unique tableside service. Includes an Adrift souvenir mug to take home

  • Altitude Sickness: Inspired by the Tiki classic Tropical Itch. Whiskey, 151, Petite shrub, Licor 43, passionfruit, lemon, simple syrup. Tart and Breathtaking

  • Scorpion Bowl: Blend of gin, rum, vodka, and brandy mixed with orange and lemon juices. Sweetened with orgeat and simple syrup. Tart and Boozy

  • Honu Nui Bowl: Inspired by the Tiki Classic Tortuga. Hamilton rum blend, Dry Curaçao, cacao, house-made grenadine, lemon, orange, and a whole bottle of champagne! Limited to parties of 6+

  • Sharks Bite (shot): Bajan and Jamaican rum blend, lime, pineapple and a splash of grenadine

  • Makani Hibiscus Spritz: Blend of iced hibiscus tea sweetened with cinnamon, orange juice and lemon. Topped with elderflower sparkling water and wildflower petals. Floral and refreshing. Non-alcoholic

  • Blue Hawaiian: Alcohol-free Tiki classic. Coconut water, pineapple, lime and Non-Alcoholic blue Curaçao, sweetened with a splash of coconut cream and agave. Tropical and sweet

“Our summer cocktails present an elevated experience with ingredients from all around the world, like ube and ume plum liqueur,” says Adrift Bar Manager Max Goin.  “We want people to come into Adrift and have such an unforgettable experience that they come back again and often with their friends and loved ones.” 

In addition to the summer menu, Adrift will feature new tiki mugs available for sale, Adult Spelling Bee comes back on May 23, and Tiki Tuesdays featuring all day happy hour.
